I love tepache!!! I miss having tepache on a hot summer day in Mexico whilst walking in the park. I'm Mexican, and my mum and grand Mother, never put Ginger or habanero, No ginger because is not a typical root ingredient in Mexico, yes we have habaneros, but we are not that crazy to put some in s beverage, so avoid that!!! INGREDIENTS 1 ripe whole pineapple (or use just the peels) 1 cup raw cane sugar (Rapadura, panela or Piloncillo) 5 whole cloves 1 whole cinnamon stick 1 quart purified water 1/2-1 tsp (or 4g) brewer's yeast (optional) This increases the alcohol content of the brew. INSTRUCTIONS Rinse the pineapple to remove any dust or debris. Cut the peel and set aside, then chop the pineapple pulp. In a large glass jar, combine the pineapple peels and as much pulp as will easily fit, cane sugar or Piloncillo, cinnamon stick, cloves and 1 quart of water. Add brewer's yeast if using. Shake or mix well. Cover the jar or container with a fermentation lid, loosely fitted Mason jar lid or cheesecloth wrap that allows the brew to degas continually. Place this container on your counter or in your pantry and let it sit for 24 for hours. (If it is hot in your kitchen, check after 12 hours.) jar full of fermenting pineapple peels With a wooden spoon, skim away any white foam that has formed on top of the liquid. Loosely cover again and let ferment for another 24-48 hrs. Feel free to taste it after 24 hours. DO NOT let it ferment longer unless you want to make pineapple vinegar. Strain the liquid from your jar into a pitcher. Taste for sweetness and add more sugar, if needed. If you prefer a more diluted version, mix 1 cup of Tepache into 1 quart of water. Serve over ice. If you are not using all the tepache right after it's strained, store in a glass container in your refrigerator to enjoy later.

I mean, yeah it looks kinda cool but at the same time I feel kinda sad watching this. Back in the day when I was a smaller kid my viejo had little to no money. I remember that one of the coolest treats was a glass of ice cold tepache en el centro with one carnitas taco. It was something pretty cheap, a glass of tepache was less than a dollar because it was made from scraps. My point is, I'd rather have that cheap tepache than that delicious looking one because that one, for me, it's the real one.

Why is organic so important? In many cases organic food needs more pesticides than conventional (which are often modified to be more hardy and pest resistant) organic food still has the stuff on the rind...natural fertilisers just means they are not synthetic...it doesn’t mean the fertilisers are any safer

Hi... I just wanted to say that here in Mexico is really unlikely to use Habanero or any kind of chilli on Tepache. It kinda tasted sweet and has that yeast smell and flavour you mentioned.

Tepache is amazing! So much good stuff happening in Mexico that most of us have no idea about... Never saw one with habaneros and ginger, sounds intriguing. I make a pretty pedestrian one I guess...piloncillo, cinnamon and a couple cloves. But a thousand times better than any commercial soda!

Hey Brad (and comment section), I made tepache a couple weeks ago, but after the first fermentation it did not taste good, it actually tasted a bit bad. Either way I passed it through the second fermentation (to see la bubble). It still tasted bad so I had to discard it. What do you think what could have been the reason for that?
