Just made something looking like this. Fun thing is you can use just the skin. Eat that pineapple AND make your tepache! Used those guava sugar pellets (2 of em), a stick of cinnamon and half a dried habanero. The first run was a little too sweet and spicy, but the second run (good idea) was just nice.

Whipped this up after watching this video. The stuff is fantastic, though maybe don't fill the jar with pineapple because the more pineapple at the start, the less tepache at the end. I used habenero because it was available at a good price at the grocery, and that kick combined with the sweet is amazing. I've already polished it all off. Just waiting for pineapple to go back on sale to make another batch.

My fermenting jars all have lids with airlocks, instead of the patent-pending rubber band trick will this work or will it let too much gas out to carbonate in the initial fermentation?

Pineapple, orange, cloves, mexican cinnamon and piloncillo only.. of course some people add tamarind to it, or other spices. fermentation takes from 3 to 7 days, watching it carefully that it doesn't turn to vinegar.

This gentleman has a great on-camera personality! Very engaging. Post-production took this video from great to greater! Also, do I hear a Jersey accent? Last night, in my stress-induced sleep-deprived haze, I watched way too many videos of regional American accents (I'm not American) because it's so fascinating, and this sounds like a very classic Jersey accent.

Great video, but I need a little advice. I tried making this today, but I have some stubborn pineapple slices that won't quit floating to the surface. (I've heard mold can end up being a problem with fermenting stuff). I dunno if it's too much water, too little pineapple slices, or if my jar was too big or something, but they wouldn't stay pushed down no matter how much I tried.

Rey L you can ferment it for a longer time , but it can get pretty strong in flavor and also with a type of gel consistency.. also at the beginning , before cutting it, I rinse a little bit the pineapple with plain water to take the dust or chemicals off.

+Roxana Velasco I had it fermenting for about 3 days and finally popped it open today, no mold thank goodness. Was quite good! And yeah, I'm guessing just using the rinds could stop the floating. Will try to do this again and let it ferment for longer, perhaps?

Rey L no problem if the slices don’t go down , it will still make the Tepache . By the way I do it with just the peels of the pineapple, some cloves, cinnamon stick and piloncillo. After 2/3 days it’s ready to drink !

The alcohol content goes up the longer you have it fermenting and the more you add sugar. I'm pretty sure the one they have is a lighter drink. I believe I could be wrong

I'm Mexican, you did it wrong We love chilis, but we don't use it to make tepache, we don't use the pineapple itself, just the husks, and we use a ceramic pot, never glass. Yeah brown sugar is famous in Mexico, but we don't use it to make tepache, we use piloncillo. And you pronounced it wrong, TEPACHE is a Spanish word you pronounce like a English word. Your tepache is bad, none Mexican would like to taste your “american tepache”

Omg ginger and chiles, nice addition, I love tepache, we use piloncillo which is a bit more like molasses i think? But I will certainly check with ginger sounds delicious.
