looks great! however, with fermentation, you do not want to keep the lid open for that long while hes "massaging" the peppers....the point of fermentation is to release to carbon dioxide and create the lactobacillus bacteria....you do not want to introduce your peppers to oxygen, which creates mould....burp it quickly everyday!

Is it safe to let the peppers float above the brine surface? I mean, apparently it is not, since he's not mentioning it, but there's oxygen above the water so aerobic bacterias can potentially grow

So when making homemade hot sauce (or any kind of homemade food that you will probably store for a longer period of time), how do you find out how long it lasts before it goes bad? I usually stick to the expiry date printed on the packaging by the manufacturer but you obviously don't get that when making it yourself. Any informative answer is greatly appreciated.

If you save up that yeast you can use it in bread and mix your flava's up Up UP Edit the brime.. don't think I wrote that gudly? But it's also good when making pickled eggs or cheese... And the sauce can be drained through a cheesecloth if you want a thicc'a sal-sauce and now I'm making Word's up y'all.

Travis schuett-... I still have hot sauce in woozy bottles from last year, we made about 30. No exploding bottles yet. The taste of the hot sauce did change slightly over a year but it's still very good. Just keep it refrigerated.

I made a variation of this hot sauce recipe on 10/27/18 and I split it between two different style jars. One is a standard lid mason jar and the other is a hermes clamp lock lid mason jar (like the jar in the video). I have been burping and agitating both jars daily over the last week, but there are significantly more bubbles coming from the standard lid mason jar. I had to release a little gas and let it settle twice before I could completely remove the lid without an overflow. Are they both fermenting at the same rate, with seepage occurring from the hermes clamp lock mason jar? I do not have a rubber band on the hermes clamp lock to hold it shut. How active is "very active"? How much carbonation is acceptable? Is there a sign there's too much bacteria, or perhaps the wrong species of bacteria? What is the weight of the 6 tablespoons of salt, or what was the approximate size of the granules? An approximate brine percentage would be helpful.
