BRAD’S FERMENTED HOT SAUCE RECIPE Ingredients: Fresno Peppers (approx. 40) Habanero Peppers (approx. 3) Dried hibiscus (approx. 4 flowers) Mixed peppercorns (approx. 10) 4 Cardamom pods 1 Pinch Maras biber (Marash pepper flakes) Crushed garlic (3 gloves) 6 Table spoons sea salt 6 Table spoons sugar Wouder (water) - 2 Quarts Preparation: 1) Using gloves, remove tops and seeds from peppers 2) Add salt, sugar, spices and garlic to fermentation jar 3) Add enough “wouder” to cover spice layer, close jar, and shake to incorporate 4) Place peppers into jar and add remaining 2 quarts of “wouder” 5) Close jar and let ferment for one and a half weeks “burping” daily 6) After one and a half weeks, check mixture and massage peppers with gloves to release gases 7) Ferment for another week or longer if necessary 8) Strain pepper solids from jar retaining liquid as “table brine” 9) Transfer solids and approximately one cup of “table brine” to blender and blend mixture at varying speeds until consistent being careful not to overhead 10) Remove mixture from blender and store in mason jar or “woozy bottles”

I wonder how the Florida Datil pepper would add flavor to this blend. It is a first cousin to the Habanero. Kind of a RARE hot pepper, because while it can be grown almost anywhere the habanero can be grown, it hails mainly from Florida, and in particular, St. Augustine area. My Menorcan kin grow and eat them raw, cooked, in recipes, etc. It has a fruiter, sweeter flavor over the habanero, although it is in the same family. Just curious. Your series in very interesting and informative. Thank you.

Dumb question category: Since you aren't boiling the finished product and I didn't hear you say to refrigerate it, why don't you have to worry about continuing fermentation once in the Woozy bottles and the danger of them exploding?

Brad, I love you man, but you keep getting disappointed that you're not getting the superwhammadyne burp that you expect out of a solid ferment, but dude, you keep using tap water. Tap water has chlorine, bromine and other chemicals that kill bacteria by design. Use spring water, my man.

botulism is not a concern with acidic fermenting--but it certainly is with low acid fermenting and canning such as green beans. Botulism actually is all over things just like the germs that give tetanus are in the soil but dont hurt you except for certain cases like they go in through a skin wound. But when fermenting--you are breeding germs in a controlled environment and if you get the salt percentage wrong plus something is unsanitary the germs explode in growth but you would likely detect something was wrong. If you did not notice and ate the item-- botulism can kill you in hours.. I personally choose not to ferment certain items such as things that contain meat, fish..
