Travis schuett-... I still have hot sauce in woozy bottles from last year, we made about 30. No exploding bottles yet. The taste of the hot sauce did change slightly over a year but it's still very good. Just keep it refrigerated.

nah Brad, no one has ever gotten ill from naturally occurring yeast... doesn't cause infections or anything.

I made a variation of this hot sauce recipe on 10/27/18 and I split it between two different style jars. One is a standard lid mason jar and the other is a hermes clamp lock lid mason jar (like the jar in the video). I have been burping and agitating both jars daily over the last week, but there are significantly more bubbles coming from the standard lid mason jar. I had to release a little gas and let it settle twice before I could completely remove the lid without an overflow. Are they both fermenting at the same rate, with seepage occurring from the hermes clamp lock mason jar? I do not have a rubber band on the hermes clamp lock to hold it shut. How active is "very active"? How much carbonation is acceptable? Is there a sign there's too much bacteria, or perhaps the wrong species of bacteria? What is the weight of the 6 tablespoons of salt, or what was the approximate size of the granules? An approximate brine percentage would be helpful.

This is now a yearly tradition with my son and i. We started last year. My son,18 years old, has had a garden at our home for the past few years and last year when we had an abundance of hot peppers,( cowhorns, dragon cayennes, habaneros, hot Portugal's, etc.) We made our first batch. We also added fresh scallions chopped up to the pepper mixture. After 4 weeks, we blended it up and put it all in woozy bottles and gave half of it away as gifts for the holidays. This year we added 3 ghost peppers to the mix. Can't wait to see how this turns out. Thanks Brad for the great video.

As for percentages 2% salt water is a good way to go. That's 10 grams salt pr 500 milliliters of water.

I always end up with something really acidic (pH around 2.5). It is too much for my taste, am I doing something wrong, like letting it ferment for too long maybe? Is there something I can add to raise the pH up without altering the taste or texture too much?

Does anyone know what kind of blender that is? After a month of pepper fermentation my blender didn’t liquefy the peppers. My sauce came out more like salsa 😂

Bit of a concern, im doing this recipe and im 2 weeks into the fermentation and my water is still clear and it doesnt have the pinkish hue that his does. Should i be worried? I did add some onion powder at the beginning but i don't think that would affect it.

Oh man! I super want to make this but I have one question. Can I use previously frozen peppers? Because I get hot peppers every week from my CSA and save them in the freezer to make hot sauce with.
