Made a batch using a different recipe and ratio of salt to cabbage. A week of fermenting in a country that only goes down to 22C (71F) in January to February gave me salty cabbage. Three days ago, I made a new batch following this recipe and, after 3 days of fermenting, got a good batch of sauerkraut! Planning to leave it out for another day or 2 and see how that goes.

SO, put it in a tray even with an air lock? What is the purpose of an air lock? I am new at this and have not bought air locks quite yet. But they are in my amazon shopping cart. So what's the purpose of an air lock verses just burping a normal lid and resting the jar in a tray?

I just need to know the bare minimal ingredients is it just salt? And the then rest of spices is just the flavoring you want? Every video I see people are using boiling water, I guess because they aren't massaging the lettuce. They also I guess are cutting time by not massaging and letting it sit there. lol This is about how I talk on a daily basis, probably why I came back to this video. Is this the sour sauerkraut or the sweet kind? I am not sure what ingredients actually make it sour VS sweet.

I found out from my first mistake with making sauerkraut that you do not want to use iodized salt. Since then I have made it with Himalayan pink salt and with kosher salt and it has worked perfectly each time. The iodized salt didn't allow it to ferment.

Fermenting according to moon phases will help with the overflow. Fermenting around the full moon, will produce more spillage. Think ocean tides. Same deal.

i guess this was 3 weeks ago but ill answer for u. He crushes the garlic because when the garlic is damaged and given time to react it forms something called allicin which is supposed to have health properties that you can probably look up.

This video brought back to many memories of making sauerkraut as a kid. We had this huge ceramic tub that we put everything in on the floor. It was actually really fun. Now that I'm older (36 is old, ok) I do kind of appreciate those little cultural things that I've learn. Gotta love German rural ND....sometimes.

I started my kraut tonight and am excited to see how it comes out. My first time ever fermenting anything, wish me luck! I left out the spices this time but if it comes out good maybe I’ll try some garlic and mustard seeds next time (I hate carroway seeds, yuck).

The more of this I watch, the more upset I get at knowing that my partners family makes sauerkraut with some cooking process on the stove and it makes their whole house smell horrific. And no probiotics, so..whats even the point?? I swear we'll get a hotel next time we visit solely for that reason.

If you don’t have an airlock just use a surgical rubber glove and put a pinprick in the tip of one finger. They are very cheap and you don’t need to remember to top them up with water which you have to do with an airlock. Rubber gloves make great air locks and the pressure in the glove ( which looks like a swollen lol) ensures nothing gets back into the pinprick. If you want you can secure the glove with an elastic band around the neck of the jar with the fingers pointing upwards, obviously.
