Good produce is a thing. Stop thinking cheap food is a good thing. Making food is a lot of science and work, from getting fields ready to foraging your plant. Cows need a lot of love until they grow into a steak. Honor peoples´ work by paying an honest price for their products.

Probably already been mentioned by people already but botulism is an extremely serious thing, even slight exposure can have fairly devastating consequences. It's not that common but there are dozens of cases a year in the US alone so not that rare, and if it's going to happen it'll most likely either be with honey or with a fermentation projects like this. On a related note- aren't chefs required to take food safety classes? If not they should, and if so Brad should maybe retake his :-D Still love him tho

"Organic" does not mean pesticide free. The list of pesticides that are allowed to be used on organic food is quite long and includes things like rotenone, which is known for its other use: reliably inducing Parkinson's disease in lab mice to use as a model to investigate the disease.

The greater the variety of microflora in your fermentation, the healthier it is. French Sea salt from the Atlantic provides the most variety. The second best is French sea salt from the Mediterranean. As you said, the salt and the produce are the keys to quality fermentation. Thank you for your great vids.

Bud you're supposed to put sanitized water in those airlocks. That lets gasses escape but wild bacteria can't get in without being killed off.

hey brad. the cooking world definitely need more humor. alton brown is a little funny and informative, but he's got that deadpan delivery that sucks the life right out of some of the things he's done. you're a little less serious which is great. vincent gets the edit just right with cut and background animation. all in all, a good wholesome package. now i know this video is nine months old. i'm totally up to date on all the episodes. i just hope you have more ideas for new shows. and sponsors! where are all the sponsors! how is it that no one is reaching out to you guys? production has only been great, people should be clamoring to you guys to place their products. anyway, you've been great. thanks.

I make tomato ketchup. Had my tomatoes ferment, with some garlic and celery for 4-5 days. Then i passed . them and let the liqued dry off, since i dont have a good sun in sweeden i made it in the oven, Tomorrow i will mix some with vinegear and sweetening not sugars since i dont want to many carbs in my food. I have some homemade ketchup for the winter :)

I purchase course Korean bay salt which is from a gulf in Korea where they dry the salt out of the water it is recommended for kimchi making so I use it for all of my fermenting. I put Garlic in olive oil but I add some vinegar as well.
