Newb here, with a question. The other recipes I've seen show fermenting coarsely sliced peppers, and adding prepared brine over them. They tell you to drain the brine after fermentation, then blend and strain the peppers. Is there a difference in the final product based on whether you blend before or after? Is it just a preference as to whether the final product will be saltier?

You repeat so often it gets boring.....adding salt is not that critical to weigh and go through all that BS....just add a tablespoon and get on with it...also you could have totally explained this whole process in 4 to 5 minutes but over 10 minutes was a waste of time, Telling us three times what kind of peppers you are preparing was ridiculous....do you think we weren't listening the first two times! thumbs down

You don't use an air lock? Mold growth, and just "skimming it off the top" doesn't mean you've removed it all from your ferment, meaning it's questionable whether you should sell it to the public or not.

Are frutescens fruitier in flavour? I have been looking for the type of chilis that you get in Thailand because they are nice and fruity but I can't find a definitive answer. Anyway I think I'll give tabasco a go next season.

fermented pepper flavour beats everything..far superior to the cooked recipes. To improve your process, get an airlock from a wine shop, you let the CO2 out, but don't allow oxygen in. The fementation bacteria you are looking for that makes lactic acid arr anarobic, whoch means they thrive in lack of oxygen.

The added iodine will turn your mash a funny dark color, as well as giving it an off flavor. In clear things like pickles, iodized salt will turn the liquid cloudy and ruin the flavor. Always use either kosher or pickling type salt. I hope this helps :)

I am following your video and I am to the part were my peppers are done fermenting. In your video you are putting the peppers in the blender and there is also son liquid. What liquid is that? You do not have any captions with directions in your video which would be helpful, but love you video. Your response would be appreciated as I would like to finish my hot sauce...... Thanks for the great video. I was wondering, you mention to NOT use table salt. Here in South Africa we have a great organic rock salt that tastes much better than sea salt (closest analogue would probably be Himalayan salt) - so I'd like to use that, unless there's a particular reason not too? Thanks again.

+JustifyJustin I would use your rock salt, as it's not the same as the table salt with the additives in it. I know this is an older post and delayed for you. I have been in the USA for 23 yers and only the past few years they have descovered the salt other than the usual table salt, I would ask in some of the stores here and they looked at me as weird. I never use the table salt, bad for you.

+JustifyJustin Here in the USA, the "table salt" usually has some additives; calcium silicate, and potassium iodide. I use only "pure" salt. Check the ingredients list from store bought salts.

Hi there. I have a small question: It's harvest time here in NZ and I have a ton of red ripe peppers - none of which are the habanero which haven't ripened yet. Is it possible to freeze all the ripe ones until the habaneros ripen, then go through with the fermentation, or will freezing destroy the texture of the chilli? Thanks in advance. R

I would not freeze them. The peppers should keep long enough until the habaneros to ripen.

+Kevin Lancaster a Riesling is dry, meaning there is no sugar left to ferment. Also, most wines are stabilised, which means they contain additives(potassium sorbate I think) that are designed to stop fermentation, I would be careful adding this to a ferment at the beginning as it may inhibit yeast activity and make it more likely to spoil or underferment.

When making my chillie sauce I top up with a sweet white wine, usually a Riesling, instead of water, for both flavour and to aid the fermentation.

+Jeremiah Rodriguez Peppers are low in sugars for fermentation, it is best to use the riper ones as they have more sugar and ferment better.
