In this episode of Handcrafted (fka Beautiful Butchery), the Pastaio of Eataly Flatiron, Luca D'Onofrio, shows Bon Appétit how to turn four types of pasta dough -- egg pasta dough, spinach pasta dough, cuttlefish squid ink pasta dough, and semolina pasta dough -- into beautiful, handmade pasta shapes.

Semolina pasta is a southern Italy specialty. From that dough, Luca makes cavatelli, malloreddus, lorighittas, cencioni, capunti, strascinati, culurgionis, and sagne incannulate. From the egg dough, D'Onofrio makes fusilli al ferretto, tagliatelle, tortellini, farfalle, garganelli, anolini, cappelletti, tagliolini, agnolotti, sacchetti. From the spinach dough, Luca makes foglie d'ulivo, trofie, fagiolini, and pappardelle. From the cuttlefish squid ink pasta dough, D'Onofrio makes orecchiette, strichetti, fettuccine, and corzetti.

If you're poor like me and still want anolini try using the lid for a small jar!! I used the lid from a bottle of maraschino cherries and it worked. It took me a few tries to get it right, but I still made my pasta. Don't forget to press down in the middle of the lid!! I'm sure other things can work too, get creative. One day, I'll get an anolini stamp like his, but a decent brass stamp is about $150-$300. I can't do that just yet, but hey. I can still have anolini!

I guess the Italian only brought back one type of noodle from China so they have to innovate on shape and not material, preparation, cooking and presentation. They really needs to get the speed thing down and infuse pasta with the much greater variety that exist in Asia

I would roll up tagliatelle differently: fold repeatedly and leave a bit out, it's easier to unroll. At least, that's how my grandma did them :)

Wow.... I never knew there were that many types. Love the video. But it would have been nice if the camera could also zoom in to show how each pasta looked like. Some were shown but some were at the distance hence the outcome of some of the pasta shapes weren't clear. Then again, loved the video! Thank you

Please share your egg dough recipe. I currently do 3 whole eggs per 2 cups of flour, with roughly 1 tablespoon of water and a teaspoon of sale. Mine has a perfect texture and taste but i love the color of yours. I'm thinking i can do 3 whites and 4 egg yolks per 2 cups of flour forgetting the water vs the 3 whites and 3 yolks plus water I'm currently doing. . Advice? We love the Garganale ad Parpardelle. Were going to make Bone Marrow and short rib Anglioletti I had a Scarpetta's this weekend. Your advice on the dough would be great. You are an artist man.

It must have taken some time to correctly develope the technique required for each pasta type.its nice to see this in an artisan form vs mass production by machine such as 99% of all american food is processed.we eat junk here with little to no nutritional value.thanx.
