In this episode of Handcrafted (fka Beautiful Butchery), the Pastaio of Eataly Flatiron, Luca D'Onofrio, shows Bon Appétit how to turn four types of pasta dough -- egg pasta dough, spinach pasta dough, cuttlefish squid ink pasta dough, and semolina pasta dough -- into beautiful, handmade pasta shapes.

Semolina pasta is a southern Italy specialty. From that dough, Luca makes cavatelli, malloreddus, lorighittas, cencioni, capunti, strascinati, culurgionis, and sagne incannulate. From the egg dough, D'Onofrio makes fusilli al ferretto, tagliatelle, tortellini, farfalle, garganelli, anolini, cappelletti, tagliolini, agnolotti, sacchetti. From the spinach dough, Luca makes foglie d'ulivo, trofie, fagiolini, and pappardelle. From the cuttlefish squid ink pasta dough, D'Onofrio makes orecchiette, strichetti, fettuccine, and corzetti.

dude great job! that's an italian name but not an italian accent meaning altho being of italian origin you're not properly italian, taking this into account the knowledge you have of this pasta is perfect and can rival many "italian purist", i saw many italians making worst dough and or not having half of your pasta skills props to you, keep up the good work

Why would you square off the dough of your culurgionis if you punch discs out in the end anyhow? You could maybe have fitted more discs without squaring the dough first... I don't see the logic.

Why not just add more sauce to non grooved pasta, instead of working hard to make grooves to hold sauce? When we were in Italy, they gave you very little sauce. Once done eating there was no sauce left at the bottom of plate.

Few questions!! So the base ingredients are just flour and water? Can one use corn instead of flour? Does it require yeast or self-rising flour or just white flour? On the vegetarian dough, is it okay to substitute spinach with Pumpkin leaves in some countries that do not grow spinach leaves? What is the shelf-life of a typical dough: At room temperature? Regular refrigerator? Freezer? What is the best drying method for commercial use if one wants to make enough for one batch? What gives Semolina its yellow color? Dough its Tan color? Considering white flour to be white and water to be colorless?

Usually spaghetti is made with no egg, unlike fresh pasta. Spaghetti are extruded so are round and egg pasta is rolled before it's cut so is flat. But they are pretty similar.
