I've been making a broth like this that I got from my sister but without the miso. Will have to step it up next time. It's winter and soup season is here.

its vegetable broth, not vegan broth. n why are u putting the vegetables in the oven... the whole point is to boil the veggies n get all the good stuff out into the water....why dry it up n put it in the oven..... dude just boil it godamitttt

I mean I’m sorry but this is just ridiculous. Grasping for straws here bon appetit. No one who knows a damn thing about cooking ever said that veg stock had to be STRICTLY mirepoix and that alone. It’s not a frickin revelation to add more to it. :|

This was pathetic and wasteful of the vegetables....Kombu is not "just a special term" for the seaweed he waved away... it's a type of seaweed. And there are SO many, TOO many better methods for obtaining flavor. Really surprised at Bon Appetit for putting this out.

Andy! I made this yesterday! resulted in the most amazing amber colored stock. I was missing the miso, so i substituted a teaspoon of Worcestershire sauce for some added umami.

"Bone broth" alternative? Well, yes, if all you need is a tasty broth rather than the “unique combination of amino acids, minerals, and cartilage compounds” (from 2014s "Nourishing Broth: An Old Fashioned Remedy for the Modern World") from which the en trend panacea is derived. Since the claim of it's uniqueness has been made, I'm assuming the authors didn't believe plant collagen was up to snuff.

Miso isn't vegan. Miso is fermented so that means it is full of live bacteria and animals. Many people may think this is just a negligible fact but vegans do not allow yeast either.

I'm vegan, but I really can't wrap my mind around this statement. We don't eat animals or the substances that come out of them because the animals suffer in the process. Plants are living, but they don't suffer, so we eat them. Fungi and bacteria are living, but they don't suffer, so we eat them. 100% of the vegans I know, eat mushrooms, tempeh, and yeast (fungi) as well as fermented foods (bacteria). If Vegans didn't eat anything at all that technically lives and grows, we would have nothing at all to eat except dirt, but even that is teeming with micro-organisms. So...what are you talking about?

Bone broth has always been disgusting for me, the smell alone physically caused me to puke, as well as other parts of an animal. Although i'm not vegan, since i do consume milk in smaller amounts, like for coffee etc., i do love vegan dishes in general, as i have always been very fond of all things plant-based since early childhood....where others would have their mouths water from cooked, fatty meats, mine would from juicy tomatoes, fatty lettuce leaves and raddish.I don't know, been always different in that regard. P.S. Vegan dishes always make me feel fantastic, energetic like a whole different person, where as animal foods always made me sluggish and fatigued. So i guess there is something right about veganism, even if i don't agree with everything.

I don't see the dried shiitake mushrooms anywhere that he mentioned at the outset, did he roast them or just toss them into the water to make the stock? I mean, he added the kombu and roasted that, did he do the same with the shiitake??? Help.

This wasn't anything new for me. Kombu is a great use for stock for many asian countries. Shiitake is well known for its meaty flavor.

I am so passionate about cooking. You have no idea! At one time in my life I left kitchen tools and I used to make 26 quarts of chicken stock at a time. I didn't have a proper strainer and there were herbs and spices in there. I stood at the kitchen table with both of the stock and a tea bag strainer with a ladle. I would strain all of my stock through a tea bag strainer so that it would be clear.

I used to make my own very good vegetable. But I found better than bouillon pretty hard to beat. I saved everything top skins dips and Tails and put them in the bag in the freezer once the bag was full I made stock and I added dried shiitake mushrooms but no miso or kombu and I have both of those.

Protip: don't waste the fond (all the brown bits stuck to the baking sheet). Place the baking sheet on the stove, add a bit of water, and deglaze that thing. Add it to your broth and enjoy maximum flavor.

I was really put off by you not putting all that in a bowl to toss it then transfering onto the sheet tray. Watching try to mix and coat stuff right on there was like watching someone with bad knife skills.

The parsley totally dried out in the oven and probably lost its fresh flavor. Also, the onion skin is totally burnt, it's gonna give a very bitter taste. I like the ingredients, but I don't see the point of baking them to that point.

I will make this stock. But I do like better than bouillon quite a bit. The problem for most people making homemade stock is storage space to freeze. I have a FoodSaver so I can put it in the bags freeze it flat so it doesn't take up a lot of space.
