This is how I make hot sauce from some of the hottest peppers in the world. Please do your research on fermentation before attempting this at home.

Excellent video! I’m growing Naga Jolokias and Carolina Reapers. Can’t wait to make a sauce like yours, minus the garlic. I’m not a fan of it. Maybe some ginger, though! Or turmeric for a mustard-like sauce. Anyway, thanks for the vid!

The hell with making hot sauce. Just cut them in half....dry them in a dehydrator, and grind them up into powder in a spice grinder. Lasts forever.

pretty much indefinitely. most cultures can't grow on something with a ph level that low

Only thing I would recommend is to use a proper digital pH Tester and only add enough vinegar to bring it down to around 3.5ph. If it's already that low don't add the vinegar. This is for food safety reasons more than anything else. Also would recommend the inverted hot bottling method. Sterilize bottles first, keep them hot in oven on low, then heat sauce to 190f and then immediately transfer sauce to hot bottles, cap them right away, and invert bottle until they have cooled off. This will help ensure no bacteria is present and sterilizes the cap too.

You lowered the hot level by adding sugar. Sugar nuetralizes the heat of a hot sauce.

That's dumb. it is called iodized salt, because it is fortified with iodine. Not ionized. You absolutely should use it, as your body needs iodine. I don't feel like explaining. Here: www.healthline.com/nutrition/iodized-salt#symptoms-of-deficiency

Ok let me just add my 2 cents here for those that indulge, I grew up making hot sauce, and learned from my dad who put this stuff on anything and everything he would eat. What I learned was Flavor over heat, and how to add heat , or add flavor, and I didn’t see it here. I use only Scotch bonnets and Habenores , either combined or separately. Each has a difference , and an apreation ~~!!

@Mooks Crossing; I have found it can depends a lot on the amount of vinegar you put into it! I have some homemade sauces that have lasted a long time if kept in the fridge!

I would just add white vinegar but the Xantham Gum is a good idea unless you want it like a tabasco like sauce. Good video.

I'd add that latex gloves are useless when dealing with superhots...nitrile gloves (as seen in the vid) are the way to go

Hey Khang, You should try lacto-fermentation (Let pepper sit in a brine solution for months! :D 30gr of untreated salt in 1 liter of water) even for garlic ;-)

The importance of letting this mixture breath is, if u screw a lid on air tight during the fermentation process, it can potentially explode. So remember that.

I usually take some out, but in this video, I took them all out because I need to seeds for giveaways. Personally, I don't like the texture of the seeds, so I do remove some.

this quick ferment mash is how i make hot sauces too. you can blend in a tomato or two and it works well and provides more volume , just make sure to stir every day! and also adding that much vinegar at the end will pretty much kill the probiotics, i usually just do a tbs for that amount, just for a flavor adjustment

try and buy the worlds Hottest peppers Dr Mikes Blk Scorpion Pepper sauce 100% Organic amazing tasting and expensive 40usd per bottle same as in video we buy here in Soho NYC and they cant keep it in stock!!! if you can find it an dos dont beleive the subjective scoville bullshit its the HPLC test that truly determines heat intensity and level of burn.

My recipe is very similar. I use agave nectar instead of cane sugar , 1/4 cup of sun-dried tomatoes and a pinch of wasabi. When it's done I test the ph and add just enough vinegar to bring the ph down to about 3.8-4.2 so I know it's safe. The reason I use agave nectar is it helps the sauce to not separate as much.

Brine is just salt water. In this case the "brine" is the moisture from the peppers and the salt.

Are you Indonesian ? My wife is and she makes me grow hot peppers for her in my garden, so she can make her own hot sauce ( sambal). But I've seen her cook the peppers first and use oil instead of vinegar. I shared your video with her. I think she will like it. Especially since she loves her nutribullet. Thanks for the info.

I’ve seen people using mason jar with coffee filter on the top. Have you ever tried it? I know that the magic bullet is made out of mason jar mouth size. You could use that!

How does it stop fermenting? surely you need to keep in in fridge, or freeze it with tops off bottles or heat it before bottling to kill the yeast?
