This is how I make hot sauce from some of the hottest peppers in the world. Please do your research on fermentation before attempting this at home.

I made it without gloves, after that, I washed, scrub my hands several times with soap under hot and cold water. After an hour I was invited to go golfing, I forgot I made the hot sauce, I wear contact lenses, so I poured the liquid on the lenses that rested on the tip of my finger and placed the lenses in my eyes and 30 seconds later my eyes, burning and red as tomatoes and me screaming like a sheep being taken to a slaughter house were heading to the ER. Not a fun evening. WEAR GLOVES....WEAR GLOVES....DON'T BE A MORON LIKE ME.

Did I miss it? You mention seeding the bell pepper, but fail to mention whether you seeded the hot peppers. Looks like you did seed at least a portion of them.

Vinegar is a base you add to counter act acid from the hot peppers. Why did you not put the spoon on your tongue to get the full flavor of your own hot sauce. That didn't appear to be hot!

Basically the way I do it but I use carrots instead of sugar to give it some sweetness.The carrot gives it some body and thickness so no need for any thickeners.

Hola Khang! I’ve just finished the seven day process but my sauce is way to hot! Would it affect the sauce if I add some fresh bell peppers to reduce the heat or is there another tip you can recommend? Thanks in advance :) I had to use all my habaneros I had frozen because my freezer died last week and didn’t think the quantities through well enough :o

Khang Starr Thanks a bunch for the input my friend! I’m going to try adding Bell pepper little by little and if it don’t work to well I will also try cooking it a little after the bell pepper. If not, at least I know they will last a long time so I can just eat it one drop at a time :p

It's hard to reduce heat once you add too many. The only way is to add more bell and make a larger batch. A little water will help but it will make your sauce runny. You can also cook it on low heat a bit, that seems to reduce the heat a little but not much.

Thanks for a great demonstration. Using a modular blender like the bullet is good advice if you don’t have a dedicated blender for hot peppers.

Im currently fermenting this recipe (3rd day of fermenting)and it smells amazing,but it has seperated and the liquis is at the bottom of my jar..is this normal? and will it still seperate after i add vinegar and blend?

Fermenting is often used in hotsauce, or making alcohol. It will bring out amazing flavor when done properly. Make sure to read more on it so you can do it properly and not spoil.

Just made this recipe. For those not wanting to stain their blender/food processor, just use the blender for making the mash, then transfer to an old glass spaghetti or pickle jar (be sure to wash with HOT SOAPY water first) and immediately wash all plastic bits of your blender/processor. I love this video and how informative it is along with your other videos. Just wonderful. However, your suggestion of 5-7 days of fermentation is not a concrete suggestion, as any type of fermentation is very much tailored to a persons style of starting the fermentation and the personal preference of how a person likes the taste of their fermented peppers. From my experience of fermenting peppers I'd say anything less than 3 weeks total is horrible. Yet, that is my opinion. There are plenty of people who would agree with you / Agree with me, or find both of us batshit crazy. That is fine. I just wanted to point out that setting lines in the sand as far as amounts is a slippery slope. Just be careful. Once again.. keep up the good work. I subbed to you and it is well worth it for the vast knowledge you have of peppers in general.

Take Tabasco sauce for instance. They grind up peppers and salt, then ferment in wooden casks for THREE years. :) I think I'm going to try a short version of that. Just grind peppers and salt. Jar and ferment for... awhile. Then add vinegar, grind some more and maybe run through cheesecloth to sieve out most everything but juice.

Man don't leave plastic in your hot sauce... It degrades and you get plastic molecules inside your hot sauce... At least use stainless steel...

Instead of bell peppers, have you ever thought of using Trinidad perfume peppers for the sweetness and color. They're literally everything about the Trinidad scorpians, but without the heat and all the fruity sweetness

HAHAHAhaha, I think he made his sauce a little too hot. He cut some video out after he tried it and came back. He was also doing that sucking noise when something is really hot, and you do it to try and calm your taste buds down. Hahah. Would be interesting to taste this. I find that apple cider vinegar tastes wonderful in a sauce once mellowed out, But the initial smell of it, to me, is just putrid, compared to a white/white wine vinegar.

you can put the sauce in jars and heat them up to 100 degrees Celsius, to sterilize them. then it is stable for at least two years.

The white part that holds the seeds, is called the pith. Placenta is traditionally used for mammals. Awesome recipe!

The seeds atually have no heat, it's the placenta that the seeds are attached to that produces the capsaicin oil. Because the seeds are attached to this part, oil will rub onto it making the seeds hot. Same as when you touch that part with your finger, your finger will be spicy.

The white part of the bell pepper is bitter as well, you should cut that off as well so there is only red left

I don't know, but if I have to guess, probably somewhere between 1.5 - 1.7 million. There were Reapers and Brazilian Ghosts in there.

Oh my gosh man. I’d love to try that sauce. This is my first year growing. I am currently growing reapers, apocalypse scorpions, chocolate maruga scorpions, jays peach, chocolate and regular ghost, 7pot brainstrains, 7pot primo, fataliis, Serrano’s, orange and regular habaneros, regular and dragon cayenne’s, hot and sweet bananas, Anaheim chiles, Fresno chilies, Tabasco’s, big Bertha bells, sweet red bells, Orange lunchbox, Santa Fe, scotch bonnets, Hungarian yellow wax, Mammoth and regular jalapeños. All of my super hot are still really small because I got a late start on them so if you have any tips on naturally getting them to pick up the pace that would help. I have put one video up on my AR-vids channel with those but I am planning to do an update video

LOL!!! You are going to have soooooo many peppers. Better be looking at all kinds of recipes and modes saving/preserving. Peppers like it hot. Since it's been 2 months since your post, you should have all kinds of peppers ripening now. Although if you have tomatoes, they're kicking into abundance now too. Of course, it depends on where you're located too. Weather. I'm on IL/WI border and things were slow with a cold wet may. I've got reapers, golden cayennes and jalapeños up the ass right now. Salsa, sauces, string and dry for flake and my gf is making pickled peppers out of some jalapeños which are gggrrrrrrEAT!!

Use the funnel to put the sauce in the squeez bottle then put in glass bottles. Pot heads are pretty easy to spot.lol
