The sauce is bright yellow from fresh eggs, and each bucatini hides cubes of fatty guanciale. This yolk-heavy recipe is beyond creamy-without cream!-with black peppercorns. It's unlike any clumpy carbonaras you've had. The tricks? Omitting most of the egg whites; their water thins the sauce. It's a pasta worth mastering.

hi Molly, I have try this recipe twice already, following every step in the video, still my eggs scramble a little, I dont know what is it im doing wrong! do I have to let the pasta cool down dome minutes before adding it to the egg sauce??

Hi, i'm Italian and I make carbonara every sunday and let me compliment you: this is the best carbonara recipe on youtube made by a non-italian, and even beats most of the other italian videos about carbonara. The only things i'd like to point out is that usually I only use pecorino (a bit more than you used so as to make the sauce creamier and stick better to the pasta) and no parmigiano. As you said in the video because of the saltyness of both guanciale and pecorino, i'd avoid adding any more salt than the strictly necessary ammount going in the pasta water in the beginning. I have never tried adding some pasta water in the cream and i really don't want it to ruin the creaminess or the balance in saltyness of the eggs-pecorino midturr, but i'll definitely try it next time and decide if it's a good twist on my usual preparation. Great video! :)

I made this and it tasted incredibly eggy, like straight up pasta that tastes like scrambled eggs (the texture was still super creamy but it just tasted very egg dominant). Did I do too many yolks? or should I do more salt? in my head it wasn't going to taste so eggy but idk if that's just because I don't know what carbonara is supposed to taste like hahaha

Hi from Rome! FINALLY an ALMOST perfect recipe! Bucatini is usually used with an amatriciana sauce. Carbonara is made with spaghetti. Also, NO Parmesan! Parmesan is from northern Italy... pecorino romano is typical in Rome.

Made like a true Italian. Not a hint of cream. Carbonara is one of my all time fav pasta comfort dishes but I cant eat it when it has cream in it, which is sacrilege in the eyes of a true Italian. Bravo :)

I'm surprised there was no mention of tempering. Tempering the eggs is VERY important. If care is not used to temper the eggs you'll end up with scrambled egg pasta.

With much more parmezan/peccorino cheese She should've ad it before mixing eggs, That's why It's not that creamy... And everyone loves creamy carbonara some chefs add parmezan when everything is done , In my opinion It's a mistake u need chesse + eggs mixture

Whats crazy is every italian grandma I know that makes this dish mixes the egg yolk with the cheese and pasta water almost making a paste...when the pasta hit it, it coats perfectly...also I was advised to use a rough kind of bucatini so that more of the carbonara sticks...i dunno. but this looks good I guess.

The eggs aren't really raw because the pasta goes in the sauce almost immediately after taking it off the heat, so the heat from the pasta actually cooks the eggs enough
