The sauce is bright yellow from fresh eggs, and each bucatini hides cubes of fatty guanciale. This yolk-heavy recipe is beyond creamy-without cream!-with black peppercorns. It's unlike any clumpy carbonaras you've had. The tricks? Omitting most of the egg whites; their water thins the sauce. It's a pasta worth mastering.

that is the right way, and I am amazed to see a non-italian doing it right. However, 2 things if I may: I deglaze the Guanciale with dry white wine and I finish to cook the pasta into the Guanciale fat with a bit of pasta water before adding the egg mixture out of the fire when the pan lost some of its temperature. Apart from that and from adding the salt at the end (that ain't a steak my friend), WELL DONE!!

Thank god, someone outside of Italy can make carbonara correctly. Another tip is to not transfer the guanciale from the pan and to mix the eggs and the other ingredients directly in the, to save time and space.

Good recipe but the pasta choice is all wrong. Buccatini sucks! Its too difficult to manage. It won't twirl like spaghetti and it won't stab either like ziti/penne.

As an true Roman, you did some major mistakes. Biggest mistake: please don’t take the guanciale and put it in the egg. Keep it in the pan and make the eggs in a separate bowl with eggs and cheese and add it to the pan while switched off. Also why do you have to add so many eggs, you just made a heavy dish 10 times more heavy. Also it looks a bit dry from here I’m looking at, add the water into the pan.

.... Unfortunately there is nothing of traditional in bucatini with carbonara souce. It just never happens. Not in restaurants, not in roman houses.....

Guanciale senza olio (un pocchetino brusciachiati, ma va bene lo stesso. Fantastica la quantità di albumi rispetto ai tuorli. Sale grosso ottimo. Forse vanno meglio o i rigatoni, o le mezze maniche, ma meglio che gli spaghetti stracotti di altri video. Mischiare la pasta con la cremina. Mi fa male il parmigiano, ma comunque ha messo il pecorino Mi fa un po' male il sale fino alla fine della ricetta, ma lo posso capire. Aò regà, na pischella americana che fa la carbonara in questo modo, è da urlo!!! Fantastica!!!

The final step of the recipie in my opinion is wrong. You should cook the pasta one or two minutes before al dente and transfer the pasta to the bowl not draining all the water and put the bowl on top of the pot with boiling water and finish cooking that way the last two minutes to get more texture and thicken the sauce

Too much salt, too many eggs. And pasta should be al dente always. Al dente is not a stage between cooking it in the water and finishing the cooking in the sauce. It's the final product that must be al dente.

This was so so good, was really nervous about making this for the first time but it went well. Can't wait to make this again! Thanks for this video, it really, really helped. Però la pasta deve finire la cottura sulla padella dove hai cotto il guanciale, con uno o due mestoli di acqua di cottura, ed è importante muovere continuamente la padella fino a fine cottura della pasta. Quando è al dente spegni il fuoco sotto la padella, aspetta due minuti, poi condisci la pasta direttamente nella padella tiepida, così l'uovo si pastorizzerà. La tua carbonara è quasi perfetta, ti manca poco

This is the way people should use if it's their first time and they are afraid of scrambling the eggs, for someone who has made carbonara lots of times and are confident in their ability its probably faster and has much less cleanup than the method used in this video.

Awesome video as always... how ever if u get leftovers and want to bring it to work for lunch or something u will get a soggy pasta so i always cook it a bit more then al dente but not “fully” cooked :-) but that’s just my opinion hehe 😜 ps sry for my bad English I’m from Sweden Ds

- no Parmegiano, only Pecorino Romano - the pasta have to be added to the guanciale and the melted fat (Why do Americans think fat is evil????) - NO pepper! this is not cacio e pepe - the egg yolks + pecorino are added at the end after the stove has been turned off

I bucatini si usano per l'amatriciana. Per la carbonara sono preferibili gli spaghetti. Il guanciale si pulisce. Il formaggio si scioglie nell'uovo di cui si usa solo il tuorlo e si pastorizza a bagnomaria. La pasta si sola direttamente nella padella con il guanciale caldo. Solo successivamente e a freddo si aggiunge l'uovo. Gli ingredienti almeno sono giusti.
