The sauce is bright yellow from fresh eggs, and each bucatini hides cubes of fatty guanciale. This yolk-heavy recipe is beyond creamy-without cream!-with black peppercorns. It's unlike any clumpy carbonaras you've had. The tricks? Omitting most of the egg whites; their water thins the sauce. It's a pasta worth mastering.

I am italian, i live in Rome. The way you made this recepy was perfection. Maybe the only difference is that we heat and stir the mixture of pasta and egg in a wather bath. But is true to say that every restaraunt has a different recepy. Good job

For a non italian it is a very close version of Carbonara. Suggestions: don't use the white of the egg, only the red. One red for the bowl, one for each person. Mix the red of the eggs with the cheese (70% pecorino romano, 30% parmigiano reggiano) and a lot of black pepper. Mix until it becomes a cream of medium to soft texture. Use guanciale and don't use any oil, fat will be released as you can see. Cook the pasta in boiling water but leave 3 minutes to its cooking for later. Remove the guanciale from the pan and leave the fat, drop the pasta with water from the cooking, stir the pasta on low flame and add cooking water as needed. This is to release the amids of the pasta into the fat and you will see it becoming a good cream. Continue for the 3 minutes, take the pan out of the fire and mix the cream of reds and cheese, adding water of the pasta as needed. The reds will melt but should not dry at all, and fat plus amid plus water will mix and make it a cream. Add the guanciale once served in the plate, add some fresh black pepper.

Only flaws are the are the excess of salt (but she uses Parmesan in parts) and the black pepper. Carbonara is not cacio Pepe with guanciale and eggs. It does not use pepper. But otherwise great recipe, almost perfect. I live in Parma.

Yes guanciale is the authentic way to do it, but bacon works just fine in this dish. It won't taste exactly the same obviously, but it will still be delicious. Get a good quality thick-cut, non-smoked bacon and make the same exact recipe and I promise you it'll taste amazing. I live in NYC so there's plenty of great salumerias and italian pork stores near me, but for the vast majority of the country guanciale is very difficult to get or very expensive to order. Just because it's not authentic doesn't mean it can't be amazing! Work with what you got!

Don’t use your hands to separate yolks from eggs of you aren’t going to superheat whatever the eggs are going into. Eggs are covered on salmonella and touching the shells transfers this to your hands and on to the eggs and you’ll spend the rest of the week ok the toilet cursing this weirdo that would be thrown out of a professional kitchen in less than a minute.

She has the impression that the carbonara sauce will fill up the whole in the spaghetti. I am not so sure if that is the cause. But I think the water will go through. So ultimately you have a spaghetti that will have a lesser window to get al dente.

Carbonara is my #1 favorite pasta. Molly made this almost perfect, except she should have tripled the amount of guanciale for that much pasta and egg.

Oh no, you don’t add the egg with the bacon. You take the same pan that you used to cook the bacon, then you put the cooked pasta after that you start whisking and you add gently the sauce.

I found out carbonara sauce is yellow color when I was in Rome. For some reasons, I always think it is white like Alfredo.

i'm actually surprised... this is the closest rendition of a carbonara made by a non-italian person i've ever seen on the internet. The ingredients are spot on. Carbonara is a typical roman dish and as a roman and a huge fan (and not so bad cook) of this amazing pasta i can only say: brava! I personally mix the ingredients (eggs, cheese, guanciale and pasta) in a slightly different way but that is my personal preference. Your carbonara looks good and i'm sure it tastes even better. Thank God you didn't add onion, cream, mushrooms, garlic, parsley or anything like that. Some inhabitants of Rome will say to you that only Pecorino should be used, that is the "unspoken carbonara rule" here in Rome lol, however even with Parmesan the taste is still good. I saw a lot of comments saying that you put too much salt in the water, but the i don't think it was that much... there was a big amount of water, so the big amount of salt makes sense. Bucatini are not the most common pasta used for carbonara but they will do just fine :) i know we italians can be very picky with our food and culinary traditions, so, great courage and great job haha

that is the right way, and I am amazed to see a non-italian doing it right. However, 2 things if I may: I deglaze the Guanciale with dry white wine and I finish to cook the pasta into the Guanciale fat with a bit of pasta water before adding the egg mixture out of the fire when the pan lost some of its temperature. Apart from that and from adding the salt at the end (that ain't a steak my friend), WELL DONE!!

Thank god, someone outside of Italy can make carbonara correctly. Another tip is to not transfer the guanciale from the pan and to mix the eggs and the other ingredients directly in the, to save time and space.

Good recipe but the pasta choice is all wrong. Buccatini sucks! Its too difficult to manage. It won't twirl like spaghetti and it won't stab either like ziti/penne.

As an true Roman, you did some major mistakes. Biggest mistake: please don’t take the guanciale and put it in the egg. Keep it in the pan and make the eggs in a separate bowl with eggs and cheese and add it to the pan while switched off. Also why do you have to add so many eggs, you just made a heavy dish 10 times more heavy. Also it looks a bit dry from here I’m looking at, add the water into the pan.
