The sauce is bright yellow from fresh eggs, and each bucatini hides cubes of fatty guanciale. This yolk-heavy recipe is beyond creamy-without cream!-with black peppercorns. It's unlike any clumpy carbonaras you've had. The tricks? Omitting most of the egg whites; their water thins the sauce. It's a pasta worth mastering.

Good job, Molly, you went soooooo close to perfection! Try to: 1. mix pecorino to eggs instead of guanciale (it doesn't add any flavour at that moment as it is already crusty) and add a robust quantity of pepper. We call it "pastella" as it's gonna be compact but "elastic" at the same time, like the pizza dough. 2. save a little more cooking water and drain pasta exactly when it's a little white inside (about 2 minutes before it is "al dente") so that you can transfer it in the pan together with the guanciale fat and a little cooking water to finish the cooking. We call it "risottare" and it helps pasta to absorb extra guanciale flavor. Just like risotto, put a little water at a time, so that you can control the whole process. 3. let the pan cool down half a minute before adding the guanciale (first) and the "pastella" (last), while stirring continuously to incorporate them to pasta. If you see the outcome is getting too thick, add some cooking water (little by little, of course) to adjust creaminess. ...Buon appetito!

I only found this just a week or two ago and only recently found time to give it a try. I made enough for the entire family plus a family friend. I cannot believe the praise I got. It turned out PERFECT. The whole family made a huge deal. Perfect directions. I just couldn't find the pecorino so I used just the parm. More Italian vids Molly, thank you.

In Tennessee, we call guanciale hog's jaw and it is eaten with black eyed peas for good luck in the new year. Alas, about the only time I can find it is late December and early January. I'm sure the curing is different between the two, but if you love fatty bacon (and I do), hog's jaw is the best.

Love the Mollytalk. Noods for brasta with a ****load of black pep. Saw a lot of compliments from Italians, too. Forget the carbonara nerds. They never agree on anything even among themselves. I mix a little differently, but your way is fine. Liked the dish swirl trick.

and remember: when you make a sauce that contains eggs, then use pasta that's NOT based on egg as well.. if you use a sauce without eggs, then you can use pasta that was made with eggs... double egg gets too heavy for the traditional Italians.. :)

One suggestion from an italian. for the sauce you have to do like a paste. Mix Pecorino and a little bit of Parmesan in a bowl , put some pepper and then add some cooking water from the pasta to that mix and mix a little bit so you get a Toothpaste-consistency mix. Then cook the pasta in the guanciale fat and when it is well flavored, let it cool for 5/10 seconds and add the paste. Mix well and there you have it!

break that bucatini up and bake it or something! Otherwise you're trying to slurp up some noodle and instead you're just sucking air through a pasta straw :(

Mixing the guanciale with the egg is wrong!! The mix should be only egg yolk pecorino/parmigiano and black pepper, should add the guanciale at the very end when pasta is ready! Cooking the pasta for the whole time in the pot is very very wrong, because it will lose all the starch released in the water! You should cook the pasta in the pot for 5/6 minutes and then finish it in a pan, with the fat released by the guanciale and adding the starchy water from the pot little by little (like you would do with a risotto) until it’s ready. that will help you create a beautiful cream that will deliver a way better result! One more thing, bucatini goes with amatriciana, never with carbonara! Carbonara is either spaghetti or mezze maniche! Ciao adesso

Lol, Italian's always insist that whatever way their particular town makes something is the only way it can be made. Every comment is like 'Only Pecorino! Too much salt in the water!' I don't find I have a problem not scrambling the eggs, I just take it on an off the heat whilst stirring. I think it'd be harder stopping the pasta getting too cold than it is to just stir to stop from scrambling. Just my preference I guess. But good shout with the guanciale- I made some carbonara whilst I was in Italy with it and now I'm ruined for the version I make at home! Tastes so so much better than bacon in carbonara, but is really difficult to get hold of where I am.

first error not cutting guanciale's skin, second one you didn't let "mantecare" (as we say in iltaly) the pasta, which means whisk with pasta's water and the liquid fat. thirdly you clearly used too little pecorino. soo that's it

This is the perfect hangover food. Although in Rome its not called bucatini, it's called trainanti. Bucatini is what the Milanesi call it to annoy Romans. I was born in Lazio, grew up in Canada. When the weather gets at its coldest, this is what I make. With a side on undressed arugula for condiment. No vinegar - that would be a disaster!
